Advice: Beating a defender trying to take a charge?

What are some great and easy ways to coach youngsters on this issue, IE- the defender has already set himself up- what should the offensive player do?

Not running in to him would be a good start.

Euro Step around him is the perfect move in this situation. It was basically designed to avoid commiting a charging foul.

Flick the right stick towards the basket then press it up to shoot. Make sure you press triangle straight after to grab the offensive board if it misses.
